

2 ¼ poundsripe peaches, peeled and thinly sliced (about 5 to 6 peaches)

⅓ cuppacked coconut sugar or brown sugar
¼teaspoon fine grain sea salt
4tablespoons butter, melted
3tablespoons of plain yogurt (regular or greek)
1Preheat the oven to 350°F
2Mix filling together in a baking pan with high sides
3Prepare the crisp topping in a medium mixing bowl, stirring together all ingredients and mixing in the melted butter
4Stir until the mixture is moistened throughout, adding up to 1 more tablespoon of yogurt if it seems dry
5Spread topping over filling ensuring it is evenly distributed (no need to pack it down)
6Bake for about 30 minutes, or until the filling is bubbling around the edges and the top is lightly golden
7Let the crisp rest for 5 to 10 minutes before serving
